100 g butter plus extra for greasing the tin
150 g almond flour
100 g pumpkin seeds flour
50 g ground linseed
1 free-range egg
salt
Tart filling
30 g kale leaves
35 g walnuts
150 g ricotta
4 free-range eggs
150 g Greek yogurt
2 teaspoons finely grated lemon rind
2 garlic cloves
2 teaspoons finely chopped fresh tarragon
salt
freshly ground pepper

Kale and walnut tart is a healthy, nutritious, gluten free tart. Great for lunch or dinner and also good to take to work.

Preheat the oven to 200 degrees C / 6 for the gas oven (medium to high temperature).

Combine the egg, almod flour, pumkin seeds flour, ground linseed, melted butter and some salt in a medium bowl. Mix until you obtain a nice dough.

Brush a 28 or 26 cm loose-based tart tin with some melted butter.
Place the dough on the tin and press it with your hands on the surface and the tin walls. Bake for 10 minutes; set aside to cool. Reduce oven temperature to 160°C / 3 for the gas oven (low temperature).

Roast the walnuts in a non-stick pan over medium heat for 2 to 5 minutes. Set aside to cool then chop them roughly.

Wash and drain kale leaves. Tear the kale leaves off the stem, then finely chop the leaves.

In bowl add the crumbled ricotta, the eggs, yogurt, lemon rind, crushed garlic, finely chopped fresh tarragon, salt and freshly ground pepper. Mix well.

Place kale and walnuts over the tart surface. Pour over the ricotta, egg and yougurt mixture. Bake the tart for 30 - 40 minutes or until golden.

Leave the tart in the tin for 5 minutes to cool slightly, but while still warm, remove it from tin.
Serve warm or cold next to a green salad.
