Ingredients

Adjust Servings:
500 - 600 g of broccoli (I head 2 small broccoli heads)
500 g potatoes
half of a small zhuccini
1 celery stalk
1 medium onion
2-3 cloves of garlic
1 tablespoon of butter and 1 tablespoon of olive oil or 2 tablespoons of olive oil
1 liter of vegetable soup or water
250 ml liquid cream for cooking or vegetable milk (like almond milk)
a small bunch of parsley leaves
salt
freshly ground pepper

You can prepare this recipe in a vegan version or not.

Wash and prepare the vegetables. Finely chop the onion and garlic. Cut the celery in slices, potatoes and zucchini in cubes and broccoli in florets.

Place the soup pot on a medium heat and add 1 tablespoon of butter and 1 tablespoon of olive oil or 2 tablespoons of olive oil. When the butter is melted or the olive oil is heated add the onion, garlic and celery. Cook, stirring occasionally, until the onion is softened.

Add the potatoes, zhucchini and the warm vegetable soup (or warm watter). Cook until potatoes are half done. Add the broccoli florets and the cream or vegetable milk. Cook until all vegetables are done.
Make sure not to overcook the broccoli in order not to lose the beautiful green colour. It should take around 7-8 minutes. Check with the fork from time to time.

Remove the pot from the heat and add choped parsley, Use a blender to puree the soup until smooth. Add salt and pepper to taste and bring the soup to the heat for another 2-3 minutes.
